Eating them isn't just good for you, it's very pleasurable, and that’s what makes this Goat Cheese and Roasted Beet Salad with Walnuts recipe so irresistible. 

Beets have been gaining popularity as a new super food due to recent studies claiming that beetroot juice can lower blood pressure, increase blood flow, and improve athletic performance, among many other things. High in antioxidants and fiber, beets not only give your body much needed nutrients, but they also have an earthy, sweet taste that scrumptiously ties this salad together. 

Pair with Ménage à Trois Gold for an extravagant, guilt-free meal that will spoil you with gilded delight.

Recipe Ingredients for Winter Goat Cheese & Roasted Beet Salad Recipe:
- 3 Medium Beets, Scrubbed and Washed (choose different types of beets to enhance color in your salad)
- 2 Seasonal Oranges, Peeled and Quartered
- 1/4 cup Extra-Virgin Olive Oil 
- 2 Tablespoons Sherry Vinegar 
- 1 Tablespoon Honey 
- 4 Cups Baby Spinach 
- 1/2 Cup Crumbled Goat Cheese 
- 1/2 Cup Walnuts, Chopped 
 
 
Directions to make Winter Goat Cheese & Roasted Beet Salad Recipe:
1. Preheat the oven to 400 degrees F.
2. Wrap the beets in foil packets and roast in the oven until tender, about 1 hour.
3. Open the foil packets and let cool. Once cool enough to handle, peel using a paper towel, then slice.
4. In a medium bowl, add the olive oil, vinegar, honey and whisk together.
5. Add the beets, oranges and spinach to the dressing, then toss to coat.
6. Top with the goat cheese and walnuts.
