Make Your Next Meal An Adventure with this Around-the-World Soup Recipe

The world is filled with many wonders, from vibrant coral reefs to beautiful painted deserts. Allow Ménage à Trois to take you on a journey with this Around-the-World Soup recipe. Once you take your first bite, you will feel as though you’ve been instantly transported across the globe.

Ingredients (serves 4):
- 2 tbspn Peanut oil
- 1 Chopped red onion
- 2 Cloves of minced garlic
- 2 tbspn Chopped fresh ginger
- 1 tbspn Crushed red pepper
- Salt and pepper to taste
- 5 cups Chicken stock
- 3 Sweet potatoes
- 1 16 oz Can of chopped tomatoes
- 1/4 lbs roughly chopped collard greens
- 1 cup Chunky peanut butter

How it's made:
1. Heat the peanut oil in a large pot over medium-high heat.
2. Cook and stir the onion, garlic, and ginger in the hot oil until softened, roughly 4-5 minutes.
3. Season with the crushed red pepper, salt, and black pepper to your preference.
4. Stir the sweet potatoes into the pot and bring the mixture to a boil. Reduce heat to low and cover the pot partially with a lid. Cook at a simmer for 15 minutes.
5. Stir the tomatoes, collard greens, and peanut butter into the soup.
6. Partially cover the pot again and continue cooking, stirring occasionally, another 20 minutes.
7. Remove the soup from the heat, serve and enjoy!
