Dare to be Different With These Peppermint and White Chocolate Crepes

When our courageous winemakers dared to create Decadence, our most lavish, over-the-top Cabernet Sauvignon yet, we also set out in search of a variety of boldly adventurous food pairings, which would unquestionably stack up to the rich, luxurious, and seductive taste of our new Ménage à Trois Decadence. Viola! We believe we discovered a stunning recipe that’s surely worthy of your rolodex. So, indulge your senses and those of your significant other with these exotic Peppermint & White Chocolate Crepes. So, while others are finishing their dinners with pie or cake, you can bite into an exotic swirl of flavors that will have you saying, ‘je t’aime’ to these irresistible crepes.

Crepe Cake is one of the most delicious ways of serving crepes, a decadent dessert made with about 25 crepes topped one upon the other, drizzled with homemade white chocolate cream, peppermint, and raspberries.

Recipe Ingredients for Peppermint and White Chocolate Crepes 
- Prep time: 1 hr
- Cook time: 30 mins
- Total time: 1 hr 30 mins
- Makes about 10-12 servings

Crepe Batter Ingredients
- 4 eggs
- 4 tbsp (60g) sugar
- 1/2 tsp (3g) salt
- 2 tsp (10g) vanilla extract
- 2 cups (480ml) milk
- 3 1/2 cups (440g) all-purpose flour
- 6 tbsp (80g) oil
- 2 cups (480ml) sparkling mineral water

White Chocolate Filling Ingredients
- 5.5 oz (150) white chocolate, small pieces
- 1/4 cup (60g) whipping cream
- 3 tbsp (24g) powdered sugar
- 1 tsp (5g) vanilla extract

Garnish
- 1 Cup Crushed Peppermints
- 3 Springs of Fresh Mint
- 2 Cups of Raspberries
- ½ Cup Powdered Sugar
 
Directions to prepare the crepes.
1. In a large bowl, mix together the eggs with sugar, vanilla extract, and salt.
2. Stir in milk, add flour, and mix well.
3. Add the oil and mineral water and whisk until smooth.
4. Heat a medium nonstick pan over medium heat.
5. Sprinkle a teaspoon of vegetable oil or butter.
6. Pour a small ladle of batter in the middle of the pan and with a circular move spread the batter to the edges of the pan.
7. Cook the crepe until the bottom is light brown.
8. Flip over and cook the other side until light brown.
9. Repeat with remaining batter.
10. Cool crepes completely.
 
Prepare the white chocolate filling.
1. Place white chocolate and ¼ cup cream into a heatproof bowl and place over a pan with simmering water.
2. Melt over low heat.
3. Add powdered sugar and vanilla extract and mix to combine.
4. Serve and enjoy your well-deserved indulgence.
