Freshly Made Veggie Ceviche — Serves 4

Ingredients
– 1 pint of cherry tomatoes, halved
– ½ cup lime juice
– ¼ cup fresh-squeezed orange juice
– 1 jalapeno, seeded and sliced
– 1 can of chickpeas
– 1 cup of cilantro, chopped
– ½ red onion, finely chopped
– 2 avocados, pitted and diced
– Salt to taste
– Tostado chips for serving

Directions
1. In a large mixing bowl, add all ingredients except avocado.
2. Mix well and let refrigerate for 2 hours.
3. When ready to serve, mix in avocado.
4. Serve with tostado chips on the side.
